A few weeks ago I shared a post about an easy way to increase your water intake with fruit-infused ice cubes. In that post, I mentioned that I was attempting to lose weight. My journey continues and today I’m sharing something I have found to be really helpful for me in the morning.
Do any of you wake up and NOT want to eat? I like to wake up, drink 2 cups of coffee, have some quiet time, and then, maybe 3 hours later, eat. Well, from what I understand (okay, everything I’ve ever read about dieting) that’s a no-no.
A few weeks ago my middle son was talking to my niece’s husband about healthy eating and he, niece’s husband, told middle son about banana pancakes. Now, niece’s husband makes me laugh (he’s hilarious at times) but he’s also smart so I wasn’t sure if he was kidding or serious (neither was my son) so we checked it out and sure enough, banana egg pancakes are a real thing. Since I had never heard of them and since Mr. Healthy recommended them middle son and I gave it a try and oh. my. goodness. they are so good and the best part, for me, is that they are easy to make even in my grumpy early morning state and I don’t even have the slightest urge to add syrup PLUS they keep me full until lunch. I usually CRAVE, big time CRAVE, carbs for breakfast but this has helped me so much with that. In case you’ve never heard of them or have morning issues like me, I wanted to share them with you.
1 ripe banana, mashed
2 eggs, slightly beaten
Heat skillet with your fat (coconut oil, olive oil, etc.) as you would when making eggs.
Mash the banana in a bowl.
Mix eggs slightly.
Add mashed banana to eggs and mix together.
This is going to be lumpy, but that’s okay.
Add banana egg mixture to hot skillet and flip when the bottom is set cooking on the other side until golden brown.
Serve and enjoy!
