One of my favorite ways to spend me time is reading. I rarely get alone time (maybe a few minutes in the morning) but when I do I like to have some coffee and read magazines.
I started my Sunday morning (ahhhhh, how I love those quiet moments) with a fresh cup of coffee and All You® and Real Simple®. I bought both magazines a few days ago while at Target because I was ready for some spring ideas ~ time to get out of the winter doldrums. I found a lot of recipes to try (dog earred a bunch of pages) and found inspiration for some new makeup and spring outfits. I’m not that talented with putting outfits together (think Johnny Cash ~ I wear a lot of black) so I really appreciate the completed looks that are shown. I’ve been known to rip pages out, put them in my purse and then pull them out when shopping and finding items that look like what’s on the page (you’re probably thinking smart cookie, aren’t you? or….so she’s the one!). 😉 As a matter of fact, I have to go shopping this week for an unexpected trip out of town and I need some wardrobe help so I’ll be getting my ripped-out pages stash of outfits ready later today along with a page of makeup products I can’t wait to use.
I wanted to try one recipe in particular and I happened to have everything on hand ~ Easter Noodle Pudding. I’ve made bread pudding but never noodle pudding and I thought this would be a great dish to serve for Easter dinner.
Sunday afternoon came around and just as I was getting ready to start some cooking and baking my boys (ALL OF THEM) went out….and took my husband with them. While I love them deeply I could finally enjoy some cooking zen while they were gone and boy did I! Cooking relaxes me and the silence of that window of time I had to the house myself was AWESOME! I had the front window open…..I heard noise and for a moment got a little worried thinking someone was in the house but then I realized that without a house full of males I could actually HEAR the outside~ oh my!
The original recipe has been altered slightly by me ~ I alter and tweak almost every recipe!
- 16 ounce package wide egg noodles
- 7 large eggs
- 1 1/2 cups sugar
- 1 cup milk
- 1/2 stick unsalted butter melted and cooled
- 1 tsp. vanilla extract
- 1/2 tsp. salt
- Preheat oven to 350 degrees F. Grease a 9 x 13 inch baking pan with butter.
- Cook egg noodles according to directions on the package. When done cooking drain and rinse with cold water.
- In a large bowl whisk together eggs, sugar, milk, butter, vanilla and salt until well combined. Add noodles.
- Pour noodle mixture into baking dish and bake for 45 minutes or until golden brown.
- Allow to sit for 5 minutes before serving. * Can be made up to 3 days in advance and stored in the refrigerator.
The recipe turned out delicious and I will be serving it for Easter. Win win!
