I often find myself scrambling to make something for dinner. I am NOT a planner. I so wish I were. I wish I were one of those amazingly organized people who had their meals planned ahead for a month, a week or heck, even a day. I was having one of those days recently where I really didn’t know what I was going to make and then this recipe came to me (it literally did via e-mail)! I couldn’t wait to try it. It was something I could make fairly quickly that was delicious, filling and even had veggies. I went to my local Giant Eagle and bought Knorr Rice sides, some chicken breasts and zucchini. I already had everything else on hand. Chicken Rice Vegetable Soup Ingredients: 1 tbsp. olive oil 3 medium red bell peppers, chopped 1 3/4 cups chopped onion 3/4 cup zucchini, halved lengthwise, then sliced 1/2 cup chopped celery 1/4 tsp. dried thyme leaves 2 cans (14.5 oz. each) reduced sodium chicken broth 1 1/2 cups water 1 package Knorr Rice Sides – Chicken flavor Broccoli 2 1/3 cups shredded cooked boneless, skinless chicken breasts Directions:
- Heat olive oil in 12-inch skillet over medium-high heat and cook vegetables and thyme, stirring occasionally, until vegetables are tender, about 6 minutes.
- Add broth, water and Knorr Rice Sides – Chicken flavor Broccoli. Bring to a boil. Reduce heat and cook covered 10 minutes or until rice is tender.
- Stir in chicken and serve immediately.
Because I have a family of 5 (4 males who eat everything in SIGHT) I doubled this recipe and they ate it all.
