Skillet Peach Cobbler

I love to cook and bake but I really hate to clean up.  I don’t have a dishwasher (unless you count me) and when I go on a cooking/baking frenzy I can’t stand the dirty dishes so I find myself washing and drying while I’m cooking and baking and then I get totally overwhelmed and crabby….well, you get the picture….so, if I make something all in one pot/pan I am a very happy camper.

Cast Iron Skillet Peach Cobbler at Cupcakes and Crinoline

I use my cast iron skillet a lot.  Something about it makes me feel all pioneer-y.  Like I should have an open fire out back and a horse tied to my tree…but I’m not real crazy about bugs so I’ll just stay inside and use the stove.  Right now you can find fresh peaches around here at great prices so I stocked up and made some Fresh Peach Cobbler in my trusty Cast Iron Skillet.  It was so easy, took no time at all and was super tasty.

Skillet Peach Cobbler

Ingredients

  • 3 cups sliced peaches
  • 2/3 c. sugar
  • 4 tbsp. butter
  • 1 tsp. lemon juice
  • 1 c. biscuit mix
  • 2 tbsp. butter
  • 1/3 cup milk

Instructions

  1. Combine peaches and 1/3 cup sugar.
  2. Add water to make 4 1/2 cups.
  3. Melt butter in a cast iron or heavy skillet. Add peach mixture, butter and lemon juice
  4. Cover and cook over medium heat until simmering.
  5. Combine biscuit mix and 1/3 cup sugar. Cut in 2 tbsp. butter to coarse crumbs. Add milk to make soft dough.
  6. Spoon over hot fruit. Cover and cook until dough is done, about 12-15 minutes.

This would be a great dessert, but while my father-in-law was visiting I served it for breakfast…yes, I did….he loves sweets so I threw caution to the wind and made this.  {I also made my Cinnamon Roll French Toast Casserole for Dinner while he was here….I was really walking on the wild side}.
