I love to bake and one of my very favorite memories of Christmas when I was little was of my Mom baking cookies.  My earliest memory is when I was a Brownie {first step before being a Girl Scout} and my mom had the entire troop over to our house where we all baked cookies for Christmas and decorated coffee cans to hold the cookies.  That memory still puts a smile on my face!

When I bake now as a mom I like to let the kids help as much as possible by adding sprinkles, marshmallows, sugars, etc., or rolling the cookies into balls and putting them on the cookie sheets. It’s such a nice time to talk and laugh and build memories for them to smile at in the future.

We have a thing in our house for Hot Cocoa {especially with marshmallows and peppermint for some of us ~ME!!!}.  These cookies are a family favorite because they taste just like a cup of Hot Cocoa  and are soft, chewy and moist!  This recipe is easy to make and once mixed up, you can keep it in the refrigerator for up to a week and make a fresh batch whenever you need {or want} one.

  1. 1 cup softened unsalted butter
  2. 1 1/2 cups sugar
  3. 1 egg
  4. 1 tablespoon milk
  5. 1 tablespoon vanilla extract
  6. 2 cups flour
  7. 2/3 cup cocoa powder
  8. 1/4 teaspoon baking soda
  9. 1/4 teaspoon salt
  10. Granulated sugar to roll cookies in
  11. Mini Marshmallows
  12. Crushed Candy Canes
  1. Mix softened butter and sugar until creamy.
  2. Add egg, milk and vanilla.
  3. In a separate bowl combine flour, cocoa powder, baking soda and salt. Add to mixture above.
  4. Cover and refrigerate dough until firm, about 2 hours.
  5. Preheat oven to 350 degrees.
  6. Form dough into balls and roll in granulated sugar.
  7. Place on cookie sheet and press your thumb in the center to form a small indentation.
  8. Bake for 8 minutes. Remove from oven and place 2 mini marshmallows in the center of each cookie.
  9. Return to oven and bake for 2 more minutes.
  10. Remove from oven and sprinkle the warm marshmallow with crushed candy canes.
