Quaker Oatmeal and Raisin Whoopie Pies #YayOats

Did you know that today, October 29th, is National Oatmeal Day?  It’s time to Celebrate the Power of the Oat, not just for breakfast but for the entire day.  All together now, stand tall, stand proud, and if you had your Quaker® Oatmeal this morning you’ll have the energy you need to shout YAY OATS!!!!!

I’m celebrating National Oatmeal day because Quaker® Oatmeal and I go way back.  I share my love of Quaker® Oatmeal with my sons and my husband.  It’s one of those foods that, for me, evokes great memories.  When I was a little girl my Dad would make a bowl for me every few days and I loved it.  When I woke up and saw the cardboard Quaker® Oatmeal container on the kitchen counter next to the stove I knew I was in for a treat.  Sometimes Daddy would just add sugar and milk, sometimes butter and syrup, but regardless of what he added it was special.  My youngest son will ask for a bowl of oatmeal for a snack {he knows that I never say no to that request} and I like knowing that he is actually asking for something that’s so good for him.   Quaker® Oatmeal is a staple in my pantry because I can use it not only for breakfast but in cookies, muffins, granola mixes, breads, meatloaf, desserts, and the list goes on and on.  I also use it in my Quaker Oatmeal & Raisin Whoopie Pies.  This is one of my favorite recipes and I am so happy to share it with you today so that you can say YAY OATS! along with me.

 Quaker Old Fashioned Oatmeal & Raisin Whoopie Pies

1 1/2 cups flour

2 teaspoons baking powder

1/4 teaspoon salt

1 teaspoon cinnamon

1/2 cup butter, softened

3/4 cup light brown sugar

1 large egg, beaten

2/3 cup milk

1 cup Quaker®  Old Fashioned Oats

1/2 cup raisins

Preheat oven to 350°.

1.  Line large cookie sheets with parchment paper.  Sift together your flour, baking powder, salt and cinnamon.

2.  Place butter and sugar in a mixing bowl and beat with electric mixer until smooth and fluffy.

3.  Beat in the egg.

4.  Add one half of the flour mixture, then the milk and then the remainder of the flour mixture.

5.  Gently stir in the oatmeal and raisins.

6.  Spoon and shape 24 mounds of batter on the cookie sheets making sure to allow room for them to spread.

7.  Bake in preheated oven for 10 to 12 minutes until baked through.

8.  Cool for 5 minutes on wire racks and then gently remove the cookies and allow to complete cooling.

Maple Cream Filling

8 ounces cream cheese

4 tablespoons unsalted butter, softened

2 tablespoons maple syrup

1 teaspoon cinnamon

3/4 cup confectioners’ sugar, sifted

1.  Place the cream cheese and butter in a mixing bowl and beat until well blended.

2.  Beat in the maple syrup, cinnamon and confectioners’ sugar until smooth.

Spread the filling over one flat side of the oatmeal raisin cookie, top with another cookie, flat side down and now you have your whoopie pies!

Yield:  12 whoopie pies
