Pumpkin Cupcakes with Cool Whip Frosting

Have you heard about the new Cool Whip Frosting?  I hadn’t until a few days ago.  To say I was anxious to try it would be somewhat of an understatement.  I love to bake and make my recipes from scratch but because I work from home and home school the boys time is sometimes an issue for me.  I am not a big fan of icing in a can {actually, I’ve never tasted one I like} but this was different.  When I heard about the Cool Whip Frosting the first words that came to my mind were ‘light and fluffy’ and that’s what I like in a frosting.  I’ve had a lot going on lately and haven’t been able to bake anything special for the kids in a while so I took the opportunity to have a “Just Because You are You” impromptu cupcake decorating party for them.  I baked some homemade pumpkin cupcakes {this is my favorite recipe}.

Once the cupcakes cooled I set up a decorating station for the boys.

I could keep working while the cupcakes baked and I didn’t have to worry about hurrying to get the frosting ready because it was already on hand.  The Cool Whip Frosting is a great option.  I purchased the Chocolate which is made with real Dutched Cocoa and the Vanilla which is made with real milk and butter just like my favorite homemade frostings.  I found the Cool Whip Frosting in the freezer section of my local Walmart {you can see and share my trip to the store, including pictures, in my Google + story}.  The Cool Whip Frosting can even be refrozen so there’s no waste.  You can refreeze what you don’t use now to use at a later date and it only takes one hour to defrost the frosting on your countertop or 4 hours in the refrigerator.  You can set out the Cool Whip Frosting while your cupcakes are baking and by the time they are done baking and cooling you’ll be ready to frost them.

The boys were easily able to frost their cupcakes.  The Cool Whip Frosting goes on smoothly and easily with no tugging on the cupcake tops and no crumbs spreading from one cupcake to another.  Just the way I like it….nice and neat cupcakes!

and the thumbs up are just to make sure he still gets to eat some cupcakes

and little M pours on the sugar…he REALLY wants these cupcakes {he’s been licking the frosting and can’t wait!}.

Finally, the moment they’ve been waiting for…time to pick the cupcake.

And now for the taste test….these were definitely enjoyed and the Cool Whip Frosting tasted, “just like mom’s” ~ and that’s a direct quote.

Closing thoughts ~ I definitely recommend Cool Whip Frosting ~

  • It tastes just as good as my homemade frosting.
  • It can be refrozen so there’s no waste.
  • It’s easy to use and goes on smoothly.
  • It saves time while maintaining everything I am looking for in a frosting.

    Those look yummy.. those 2 little guys eating them I bet thought so too!! The pics are so cute. I loved the sign “Because you are you”…clever and sweet!

    I was wondering…do you have to refrigerate the cupcakes after you frost them with the cool whip frosting?
