COOL WHIP Pineapple Frosting, Pudding Pops and More

Dessert is always a special treat….but what makes it extra special in our house is COOL WHIP Whipped Topping.


I love to bake and when I make a cake, whether it is from scratch or from a box, the frosting is what gives it that extra oomph.  I prefer a frosting that is big on flavor but not heavy.

COOL WHIP Pineapple Frosting:

1 – 8 ounce container COOL WHIP thawed

1 – 8 ounce package of cream cheese, softened

1 – 4 ounce package instant vanilla pudding

1 can crushed pineapple drained well

  1. Use the cake flavor of your choice {I chose a yellow cake}.  Prepare the cake according to the directions on the box and bake in a 9 x 13 inch pan.  Once baked allow to thoroughly cool.
  2. Prepare the pudding per the directions on the box.
  3. Add the softened cream cheese to the pudding using a mixer and blend thoroughly until smooth.
  4. Using a spatula gently add the thawed COOL WHIP and the drained pineapple to the pudding/cream cheese mixture.

Spread mixture on cooled cake and refrigerate until ready to serve.

When I was growing up desserts were rare but when my Mom made Jello I knew that COOL WHIP was in the wings and when the Jello was served, the COOL WHIP was right on top.  Jello and COOL WHIP are still one of my favorite desserts.

The kids really like pudding pops and adding COOL WHIP to the mix improves the texture of the pops making them smooth instead of icy.

COOL WHIP Pudding Pops

1 small package of instant pudding mix {flavor of your choice}

2 cups cold milk 8-ounces of COOL WHIP {thawed}

Popsicle molds

  1. Combine the pudding mix and milk beating until smooth.
  2. Gently add the COOL WHIP and mix well.
  3. Pour into molds and freeze.
Fresh strawberries are in season and our family likes them for dessert with some COOL WHIP on top.

    I will definitely have to try this frosting for Jared. He HATES frosting on anything, but likes Cool Whip so I think it would be something he would like. Having type 2 diabetes now, I can’t have anything with regular frosting, but Cool Whip and cheese are definitely things I can have. I am going to give this a try with the sugar free pudding and see how it goes. Going to try to pudding pops with sugar free pudding as well. As always love your suggestions and your photos are wonderful! Keep up the good work!
