Glazed Carrot Cake

My husband recently celebrated a birthday and one of his favorite cakes is carrot cake.  This carrot cake recipe is moist and dense but not too sweet.  The glaze is less rich than a cream cheese frosting and the combination of cake and glaze packs just the right amount of sweetness and flavor.

 

Glazed Carrot Cake

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 60 minutes

Yield: Serves 10

Glazed Carrot Cake

Ingredients

    Cake
  • 1 1/2 cup all-purpose flour
  • 1 cup sugar
  • 1 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup vegetable oil
  • 2 eggs, slightly beaten
  • 1 teaspoon vanilla
  • 1 1/2 cups finely shredded carrots
  • Glaze
  • 1 cup powdered sugar
  • 3-ounce package of cream cheese, softened
  • 1 tablespoon whole milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees.
  2. In mixing bowl combine flour, sugar, baking soda, cinnamon and salt.
  3. Once combined stir in oil, eggs and vanilla until well mixed. The batter will be the consistency of peanut butter {thick}.
  4. Mix in shredded carrots. Once the carrots are added and mixed in the consistency thins down some but is still thicker than a normal cake batter.
  5. Spread into greased and floured 9" round cake pain. Bake for 40 to 45 minutes or until wooden pick inserted in center comes out clean.
  6. Glaze
  7. In a small mixing bowl beat the cream cheese until smooth.
  8. Add the powdered sugar, milk and vanilla.
  9. Pour glaze over warm cake. Allow to cool down and serve.
