Banana, Banana, Banana {Bread & Muffins}

Banana bread and banana muffins ~ so easy…so good and so good for you…right???? well, maybe not but bananas are a fruit so I’m considering it healthy…. {is it any wonder I am not in charge of the government’s nutrition pyramid?!}


3 cups all purpose flour

2 teaspoons baking soda

2 teaspoons baking powder

1 teaspoon salt

6 large ripe bananas, mashed

1 1/2 cups white sugar {if any of you substitute  honey, I would love if you could share your recipe}

2 eggs

10 tablespoons butter, melted


1.  Preheat oven to 350° F.  I used a muffin pan and lined it with paper liners.  I also made a loaf of bread so I greased and floured my glass pan.

2.  Sift together the flour, baking powder, baking soda and salt and set aside.  {I HATE to sift so I just use a fork and stir everything together for a few minutes.}

3.  Combine your mashed bananas, sugar, eggs and melted butter in a large bowl.  Fold in your flour mixture a little at a time until smooth.  Scoop into cupcake tin and loaf pan.

4. Bake the muffins for 25 to 30 minutes.  Once they are done {the tops will spring back when lightly touched ~ or you can insert a toothpick in the center…if it comes out clean…they’re done}.  If using a metal loaf pan, continue baking for another 30 to 40 minutes.  If using a glass loaf pan, lower your oven temperature to 325º F and leave in oven {top rack} for another 30 to 40 minutes.  The bread is done when it is golden brown and when a toothpick inserted in the center comes out clean.  This takes a little patience and you may need to add time {5 minute increments} for this to get baked the whole way through.

This makes 6 banana muffins and 1 loaf of banana bread

    Ah! I’m making some of this today! :) I’m making banana bread. IMO, I’d use half that amount of sugar b/c the bananas are already sweet. I’d also use demarara or unbleached organic sugar if I wanted sugar and if I wanted honey I’d use about 1/2 cup. You kinda have to play with the recipe to get the right consistency. Fun in the kitchen! :)
