I have leftover ham….lots of leftover ham. What to do???? I am still tired from Christmas Eve and Christmas Day so I wanted to make an easy dinner with ‘stuff’ I had on hand…I had ham, eggs, onions and cheese and a crockpot so I made this ham, egg, onion and cheese casserole and everyone here, including myself, really liked it. You could just as easily make it the night before for breakfast but sometimes breakfast for dinner is a nice, unexpected treat. : )
Ham, Egg, Onion & Cheese Crockpot Casserole
18 eggs
1/2 onion chopped
1 tablespoon butter
1 cup of milk
1 cup of grated cheese {any flavor ~ I used Italian Cheese}
Leftover ham cubed {3 cups}
This recipe is easily adaptable to just about anything you want to add ~ mushrooms, green peppers, sausage, cheddar cheese, bacon, etc.
Chop the ham into cubes and add to the bottom of crockpot.
Chop the onion and saute it in 1 tablespoon butter ~ when sauteed place on top of the ham in the crockpot.

Beat the eggs, add the milk, beat again. Add the cheese stirring gently and place into crockpot.
Cook on high for 4 hours. I have a newer crockpot so this may be hit or miss time wise. If you need to leave your crockpot on all day, simply set it to the lowest setting for 8 hours.
