I love cucumber salad…my mom made an awesome salad with sour cream, milk and sugar… while this was and always will be my favorite way to serve cucumbers I have a fat free, low cal version that is super tasty!

Cucumber Salad

3 cucumbers – peeled and sliced thin

3/4 cup of water

3/4 cup of vinegar

3/4 cup Splenda

1 teaspoon salt

Mix the water, vinegar, salt and Splenda in a microwave safe bowl and microwave on high for 60 seconds until the Splenda is dissolved.  Pour over cucumbers, mix well, cover and refrigerate until ready to serve.

sweet and sour hugs, mb

I use all kinds of fresh veggies in this same recipe. I mix small yellow squash, sliced, broccoli flowerettes, fresh sliced mushrooms, onions, radishes, cauliflower, even celery if I have it. The veggies are great! Then if they aren’t all eaten w/in a timely fashion, I drain it, throw it all in my ninja and make relish out of it. Great on hotdogs or as a side dish with beans, and a meat. :)

    • Sherry ~ I had never even thought to do this ~ what great ideas…I will definitely be doing this over the summer. Thank you so much for sharing and taking the time to leave a comment ~ I truly appreciate it.
