It’s snowy and cold and my two youngest boys are sick – so what should I make for dinner….Chicken Noodle Soup of course! My mom made the best chicken noodle soup with homemade kluski noodles. When she made soup, I was in kid heaven. Unfortunately, I did not get my mom’s recipe before she passed away but over the years I have come up with a recipe that’s sort of close to Mom’s. Mine is a little more ‘health conscious’ but still tasty.
Chicken Noodle Soup
2 pounds of cooked skinless, boneless chicken breasts shredded or cut into bite sized pieces {I brine & poach my chicken for extra flavor and moistness}
64 ounces of chicken broth {I like to buy 6 – 32 ounce boxes in a one package at Sam’s club-this is quite economical}
2 carrots peeled and sliced
1 stalk of celery sliced
fresh ground salt and fresh ground pepper to taste
1 – 12 ounce package of whole grain noodles
1. Place the chicken broth in a stockpot over medium high heat and bring just to a simmer. Add carrots and celery and simmer until tender, about 10 minutes.
2. In another pot, prepare your noodles according to the direction on the package, cooking until just tender. Drain the noodles and add them the the stockpot along with the shredded chicken.
3. Season with salt and pepper.
4. Heat until nice and hot-serve!
