Years and years ago {I’m not telling you how many!} I came across this potato soup recipe and fell in love with it. It is smooth & creamy and in my humble opinion perfect. I will be serving this on Christmas Eve. It is a family favorite but since it is so NOT totally healthy, I usually only serve it once a year and then dream about it the other 364 days.
Potato Soup
8 medium potatoes
3 medium onion
6 celery sticks
1/4 pound fresh mushrooms
2 or 3 sprigs parsley
1/2 pound butter
1/2 gallon milk
1 pint table cream
3 tablespoons flour
salt
pepper
Dice celery, onions and mushrooms; combine in a deep large soup pot and saute in butter. Peel and dice potatoes. Add to sauteed mixture a layer of raw, diced potatoes and chopped parsley. Cover with water and boil until potatoes are cooked. Do not drain water from potatoes in sauteed mixture. Add milk and cream. Simmer slowly for approximately 5 minutes. Brown 3 tablespoons flour in small frying pan, then add slowly to soup. Salt and pepper to taste.

I love soups with celery and parsley. They add such a fresh flavor.
