My dad was a wonderful cooker/baker. He rarely got to strut his stuff as my mom always liked a ‘clean’ kitchen, which meant no messes, and the only time Dad was allowed to cook was when Mom took her weekly-always Monday- day to herself for shopping {Mom was a diva from way back}. I missed Mom when I came home from school on Mondays but a part of me was so darn excited to see what Dad was cooking up. His Macaroni & Cheese Casserole was one of my favorites.
Dad’s Macaroni & Cheese
4 cups cooked elbow macaroni {8 ounces}
2 tablespoons butter cut up
2 cups cubed sharp cheddar cheese
1 cup shredded cheddar cheese{reserve for topping}
1/2 teaspoon salt
1/4 teaspoon pepper
3 eggs beaten
3 cups whole milk
Bread Cubes:
Two slices of thick bread
2 tablespoons butter
Heat oven to 350°. Combine macaroni, cheese cubes, butter, salt and pepper. Place into greased baking dish. Whisk together eggs and milk and pour over macaroni.
Assemble bread cubes: Heavily butter bread and cut into cubes.
Scatter bread cubes on top of casserole. Sprinkle with shredded cheese.
Bake 40 to 50 minutes until cheese is melted and milk/egg mixture has thickened to the consistency of a custard.
Allow to cool for 10 minutes before serving.
Serves 8
