Chicken in Cream Sauce

This is one of my favorite recipes.  It is easy and full flavored and while it is not a true “low-calorie” recipe the addition of yogurt {in the stead of using cream only} does help to lighten up this sauce.

Chicken in Cream

4 skinned and boned chicken-breast halves {approximately 4 ounces each} tenderized/flattened

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon butter or margarine

1/2 cup heavy cream

1/3 cup plain yogurt

1.  Season the chicken {both sides} with 1/4 teaspoon salt and 1/4 teaspoon pepper.

2.  Melt butter in pan-once melted brown chicken and continue cooking until cooked through.

3.  Remove chicken from pan to serving plate.  Add cream to the pan drippings, bring to boil, lower heat and simmer stirring often for 2 to 3 minutes until thickened and reduced to about 1/3 cup.  Remove from heat.  Stir in yogurt until well blended.  Add remaining salt and pepper and pour over chicken.
