Banana Split Cupcakes

Cupcake Monday is Back!

I am finally {I hope and think} back to my regular routine which means cupcakes!

This is another recipe from Cupcakes Galore by Gail Wagman-my most recent go-to cupcake cookbook.

Banana Split Cupcakes

2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

1 stick unsalted butter

1 1/2 cups sugar

2 eggs

1 teaspoon vanilla extract

1 cup ripe mashed bananas {about 2 medium bananas}

1/2 cup buttermilk or sour cream

strawberry preserves for filling

Icing

The book recommends chocolate fudge icing but I used whipped cream frosting {recipe below}

1 cup whipping cream

1/4 cup sugar

1 teaspoon strawberry extract

1.  Preheat oven to 350°F.

2.  Mix flour, baking powder, baking soda, and salt together and set aside.

3.  Cream butter and sugar until light and fluffy.  Add eggs, one at a time, mixing well after each addition.  Add vanilla and mashed bananas and mix thoroughly.  Alternately beat in flour mixture and liquid and blend until smooth.

4.  Spoon batter into cupcake papers, filling cups about 2/3 full.  Smooth batter with the back of a spoon.  Bake for 20 minutes or until a tester inserted in the center comes out clean.  Remove from oven and cool.

5.  When cupcakes are cool, scoop out the center of each cupcake with an apple corer.  Drop in a teaspoon of strawberry preserves.

6.  To make the whipped cream:  with an electric beater, beat cream until it starts to form soft peaks.  Gradually add sugar, beating constantly.  Add strawberry extract and beat until stiff.

7.  Frost cupcakes adding chocolate syrup, fresh banana slices and a cherry for garnish.

yields: 18 cupcakes

These were really delicious-moist, tasty and decadent!

so im trying to make these , where does the sour cream or butter milk go in? i have the cook book you took the recipe from and it says nothing about where and when to add butter milk or sour cream.

Hi John,

Step 3 ~Alternately beat in flour mixture and liquid and blend until smooth. The liquid is the sour cream or buttermilk.

1/2 cup or 1/2 tablespoon?

Thanks so much for bringing that to my attention…I corrected the recipe and it is 1/2 cup.
