Chocolate Chip Muffins

These chocolate chip muffins are easy to make, moist, tasty and a slightly healthier version of traditional muffins.The cream cheese filling can be omitted.

Ingredients

Filling

1 package (3 ounces) low-fat cream cheese, softened

1 tablespoon sugar

I tablespoon milk

Muffins

1 cup milk

1/3 cup applesauce

1 egg

2 cups whole wheat flour

1/2 cup sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup chocolate chips

  1. Heat oven to 400°F.  Grease bottoms only of 12 regular-size muffin cups with shortening or spray, or line with paper baking cups {spray the bottom only of the cups}.  In a small bowl, mix the cream cheese, sugar and milk {the filling ingredients}.
  2. In large bowl, beat milk, applesauce and egg with wire whisk or fork.  Stir in remaining muffin ingredients just until moistened.  Evenly divide 1/2 of the mix and spoon into the muffin cups.
  3. Place approximately 1 rounded teaspoon of filling on top of batter. Top with remaining 1/2 of the batter.
  4. Sprinkle tops with sugar if so desired.
  5. Bake 20 to 25 minutes or until golden brown.  Remove from pan immediately to cooling rack.  Cool 5 minutes.  May serve warm or cool.

Ohhh, nooo…more irresistible muffins! These look amazing, just like the pumpkin ones did, so I’ll absolutely be baking these in the near future! Love the whole wheat flour that it calls for too- I think it adds so much more to a baking recipe, where it fits.
