Chicken, Bacon and Mushrooms with Mashed Potatoes

I love slow cooker recipes.  The other day this one was featured on  Real Simple.  It sounded so tasty I thought I would give it a whirl.  It was delicious and my family loved it.  The original recipe is below along with my changes noted in pink italics.  I think the original recipe was easy enough but I substituted with what I had in my pantry and the result was still wonderful!

Slow-Cooker Recipe: Chicken with Bacon, Mushrooms, and Onions

This is the country version of the fussier coq au vin. Serve it with mashed potatoes.

1/2 pound sliced bacon, diced
1 4- to 6-pound chicken, cut up -4 large chicken breasts sliced 1 inch thick
1/2 cup dry white wine (or 1/4 cup dry vermouth plus 1/4 cup water)-white cooking wine
1/2 pound small white mushrooms-2 small cans of sliced mushrooms drained
1 cup frozen small white onions, thawed-1/4 cup of dried onion flakes
6 garlic cloves, chopped-1/2 teaspoon garlic powder
3 sprigs fresh rosemary (or 1 tablespoon dried rosemary leaves)-omitted
1 teaspoon kosher salt
1/4 cup water
2 tablespoons cornstarch-1/2 cup of chicken gravy mix

Cook the bacon in a large skillet over medium-low heat until crisp. With a slotted spoon, transfer it to a 4- to 6-quart slow cooker. Pour off all but a light coating of fat from the skillet. Add the chicken and brown over medium-high heat; transfer to the cooker. Pour the wine {cooking wine} into the skillet and scrape up any browned bits; add the skillet contents to the cooker, along with the mushrooms, onions, garlic, rosemary-did not use, and salt. Cover and cook on low heat for 6 hours, or on high for 3 hours. Transfer the chicken, bacon, and vegetables to a platter; keep warm. Pour the sauce into a small saucepan. Combine the water and cornstarch {1/4 cup water and 1/2 cup chicken gravy mix}; stir it into the sauce. Heat to boiling, stirring constantly, until the sauce thickens, about 5 minutes. Pour over the chicken.


Yield: Makes 6 servings

Now I like the idea of that middle book, I find all the slow cooking I to, tends to be variations on meat and potato stew, like my mom would have made. Heck, or even my grandmother.

Love my slow cooker too, but sometimes it’s hard to find really good recipes…this one sounds so yummy it’s going on my list for next week – I bet it smells wonderful while it cooks too :)
