Preheat oven to 350°. Lightly grease cookie sheet.
Ingredients:
1/2 cup shortening
1 cup light brown sugar-packed
1 egg
2 tablespoons water
Combine the shortening and brown sugar, blend in egg and add water. Set this aside.
1 1/2 cup flour {I used whole wheat but all-purpose works just as well}
2 teaspoons instant coffee granules
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
1/4 teaspoon salt
Combine dry ingredients.
Add dry ingredients to the sugar mixture mixing well. Fold in 1/2 cup chocolate chips and 1/2 cup raisins.
Pinch off about 1 tablespoon of dough and roll into a ball, flatten slightly and place on cookie sheet.
Bake for 12 minutes. Yields approximately 30 cookies.
