Are you looking for a quick, easy, healthy, relatively inexpensive meal? Well, then, you have come to the right place. This recipe is my mothers and you can adjust it/alter it so many ways.
Basic Recipe (serves 6):
3 pounds of lean ground meat, 1 cup of cooked rice, 4 eggs, 1/2 cup onion (optional), 2 or more peppers, 1 can of tomato soup
First, start by parboiling the peppers. If you are not sure how to do this, cut your peppers in half (you can also just cut the top off for a twist on presentation). Once your pepper has been opened, take out the seeds and rinse. Bring a pot of water to a boil. Once the water is boiling, place your peppers in the water and allow to boil for 10 minutes. Remove from water and drain. Next, cook your rice according to the directions on the package and then allow to cool. In a large bowl, slightly beat your eggs and then add the rice, meat, onions and salt. Pinch an adequate amount of the meat mixture out of the bowl, shape, and place into the peppers. My kids are not particularly fond of the peppers so I make meatballs out of any leftover meat. Place everything into a dutch cooker, casserole dish or slow cooker. Open the tomato soup and pour over the top of the stuffed peppers and meatballs. Next add one can of water to the side of your pot. Place a lid on the pot and place in a preheated oven, 350° for 1 hour and 30 minutes.
Make it Italian by mixing approximately 1/2 cup of Parmesan cheese to the meat mixture above (forgoing the onions), cover with Spaghetti sauce instead of tomato soup and bake as above. For the last 15 minutes of baking, remove the lid, sprinkle with mozzarella cheese, and return to the oven.
If you want a more colorful presentation use red, orange and green peppers.
I make some extra rice, place it in a container with a moistened paper towel on top, seal the container and place in the refrigerator for rice cereal the next morning. This is so good! Just place the rice in a bowl, sprinkle with some sugar and add milk. My parents grew up during the depression and learned to stretch their money and this was considered a treat and was one of my favorite breakfasts.
You can also place the above in a slow cooker and cook on low for 8 hours. My pictures look a little “bland” but it actually tastes very good and the kids like it. I hope you enjoy, mb.
