Pumpkin Pie Cake {sweet, moist and easy!}

This recipe is very easy and the results are delicious.  Excuse the picture of the frosted cake…my kids couldn’t wait to eat it and I had to get to work…so…the cake wasn’t cooled quite enough to allow for good frosting coverage. 

Ingredients:

16 ounce can of pumpkin {the kind you use for pumpkin pie}

12 ounce can evaporated milk

3 eggs

1 cup sugar

2 teaspoons cinnamon

18 1/4 ounce package of yellow cake mix

1/2 cup melted butter

8 ounce package cream cheese {I used the lower fat version}

1/2 cup of powdered sugar

3/4 cup thawed whipped topping {I used the low fat version for this also}

Preheat oven to 350°.  Grease a 13 inch by 9 inch baking pain.  Mix pumpkin, milk, eggs, sugar and cinnamon together until smooth and pour into your pan.  Sprinkle the dry cake mix over the top of the pumpkin mixture—do NOT stir in.  Now, gently pour the melted butter over the top of the dry cake mix.  There will not be enough butter to totally saturate the top but it will be absorbed by the cake mix while baking.  Place in oven and bake for 60 minutes.  Remove from oven, cool, and invert onto serving platter.  Once totally cooled make the frosting.  Blend together cream cheese, powdered sugar and whipped topping and spread over cooled pumpkin pie cake.  Refrigerate until ready to serve. 

This is also good served warm without the frosting and instead topped with whipped cream!  warm and sweet hugs, mb.

Goodness, that cake looks scrumptious! One thing I love about Thanksgiving and Christmas is the desserts. Man, oh, man, praise the Lord I am not diabetic. LOL!
